Quick GF flatbread (soft and delicious!)
This easy flatbread can be made in minutes. It's super soft, has a great flavour and has a myriad of uses (eg, the next recipe, zucchini, za'atar flatbread!)
At home, we often make it last minute to have with dahl or to have with hummus and veggies.
10/10 recommend using Bob's Red Mill All Purpose GF flour. Not all GF blends are created equal, and unfortunately some blends just donโt work for some things, but this one always works perfectly.
(makes 2 flatbread)
1 cup Bob's Red Mill All Purpose GF flour
1 tsp baking powder
1 tsp salt
1/2 cup unsweetened, greek-style yogurt (I use Yoggu Original)
In a bowl, thoroughly mix the flour, baking powder and salt. Add the yogurt and mix with a spoon until it comes together to form a dough- mildly tacky, but not so wet that it can't be handled with a small sprinkling of flour.
Heat up a pan over medium heat.
Turn the dough out onto a lightly floured surface and divide it into two. Keeping the surface floured, roll each piece out to about 1cm thick.
One by one, heat the flatbreads in the pan (I use a bench scraper to help transfer it). After a couple of minutes on the first side, little bubbles should appear on the surface. At this point, flip it over and cook for another couple of minutes.
Eat straight away! (or reheat in the oven later)
